    Rate of heat transfer is in large part controlled by the delta temp between the 2 systems. While you'll have less time to transfer heat to the coolant in a faster moving system, the delta will remain larger since the coolant doesn't have as much time to get saturated.

    Have you measured starter voltage while cranking for a drop? That can let you stop chasing electrical problems before the starter...I forget whether you're jumping it at the starter solenoid or the slave?

    Some of the vortecs had adjustable rockers I'm pretty sure. Mine didn't, and I don't miss it.

    No reason to keep the non vortec heads, everything's possible with time and money. There will be headaches which will be dependent on the particulars of your setup

    Surging / losing rpm

    Throw a timing light on your coil wire. You'll be able to see if your ignition is momentarily cutting out, and if it's before or after the distributor cap. Agree that it looks like a wiring problem. Can also try wiggling wires when underway to see if you can reproduce.
