I just did a iboats search for a good beer batter recipe and wow, a ton of hits,but wait,these are battery hits not batter hits. I guess I should had used the word recipe. :D

Easy.........<br /><br />Beer<br /><br />Flour<br /><br />Pour enough beer into flour for a pancake batter consistency. Dry fish with paper towels before dipping into batter, deep fry. Give yourself enough room in oil this batter rises to double in size.<br /><br />You can also add cajun spices to batter. :)

I do not do beer batter but I have heard one of the secrets is to make it up at least 6 hours in advance and let it work it's majic in the fridge.

can i do battered fish in a shallow pan or do i have to deep fry it?. sometimes when i make breaded fish i just use a shallow pan.

Hey a friend of mine is flying in this afternoon who alway buys a can of beer when we go Bass fishing. She opens it up to let it go flat in the morning and that evening uses a pre-mix batter.. really good.. I'll post this evening.. been doggie sitting for them.. I'll hold the psycho dog randsom until she gives me the recipe this evening. :D <br /><br />Like LF said the batter doubles in size and is sooo tastey!

OK OMC...here's my recipe for fish or just about any seafood...especially shrimp.<br /><br />What ya' need...<br />12 pack Bud Longnecks..(that's just what I prefer)<br />Cornflakes<br />Ritz Crackers or equivilant<br />Eggs<br />Flour<br />Large zip top freezer bags are good for the process.<br /><br />Into one freezer bag dump a bunch of cornflakes and Ritz Crackers. Judge what ya' will need. Crush them all up fine. Leave in bag.<br /><br />Dump some flour in another Bag.<br /><br />Break some eggs into a bowl good enough for dipping into.<br /><br />Do up your fillets or other seafood. Dry well.<br /><br />Start by putting the fillets into the flour bag and coat.<br /><br />Then dip the coated fillets into the egg and then put into the Corflake/Ritz bag and shake up so the fillets get coated real good.<br /><br />Deep fry in cooker or large skillet with oil or your favorite type of oil until fillets are golden brown.<br /><br />Serve.<br /><br />This recipe is how come I always get elected to cook fish on trips or at home. It's really good.<br /><br />The Longnecks???? Oh...you just drink them as needed. :D :D

Well OMC....I have used Cherrios' on occasion....not bad either. Ifn' yer' like me, I like to experiment when I can. Make up yer' own coating. It's nearlly all good to great! :D

ok, let me get serious here.<br />Here is the one I use when I do any fish, and that is pretty rare.<br />It is also good for chicken.<br /><br />Beer Batter<br /><br />2 Cups of Flour<br /><br />2 Teaspoons of Cornstarch<br /><br />Salt and Pepper to Taste<br /><br />4 Eggs, Separated<br /><br />4 Cups of Beer<br /><br />4 Tablespoons of Vegetable Oil<br /><br />Spicy Dipping Sauce<br /><br />1 Cup of Ketchup<br /><br />2 Tablespoons of Hot Red Salsa Sauce<br /><br />4 Tablespoons of Grapefruit Juice<br /><br />2 Tablespoons of Lime Juice<br /><br />2 Tablespoons of Worcestershire Sauce<br /><br />2 Tablespoons of Prepared Horseradish<br /><br />Dash of Tabasco<br /><br />Directions:<br /><br />To make the batter: In a large bowl, stir together the flour, cornstarch, salt, and pepper. Stir in the egg yolks until combined. Stir in the beer and the oil. Cover and refrigerate for 3 to 12 hours. Reserve the remaining egg whites in the refridgerator.<br /><br />To make the sauce: In a medium bowl, stir together all of the dipping sauce ingredients until combined.<br /><br />Just before serving, beat the egg whites with an electric mixer in a large grease-free bowl until soft peaks start to form. Fold the whites into the beer batter.<br /><br />Pour oil into a deep-fat fryer or a heavy saucepan and heat to 375 degrees. Dip each piece of fish in turn into the batter and fry until golden brown and cooked through. Drain on paper towels. Serve with the sauce.

this batter is real simple--and oh so good imo--especially w/ fresh from under the ice blue gills.<br /><br />quantity of ingredients determined by quantity of fillets:<br />Eggs, flour-seasoned to your liking, I add salt, pepper, and ground onion powder to taste to flower. Peanut oil or veggie oil.<br /><br />Take some eggs--seperate yolks from whites-<br />beat whites untill the start to fluff up like marange, add back 1/2 the yolks, beat some more untill fluffed up.<br /><br />Add a 1/2" or so oil to fry pan. Heat up.<br />Add fillets to egg fluff--then dredge fillets in seasoned flower. Fry them till golden brown, turning and all that stuff.<br /><br />This is a very light "breading" and very good imo.

pat's batter results= this batter is very light and fluffy and does not over power the fish. I like it. :D

-thanks for trying that receipe One More Cast-- I'm one of those that use tartar or butter dip on most fish I fry up--but 'gills this way are like candy. What were you frying if I may ask?

Here's da way dat Coonass fry up dem fishes.<br /><br />Catfish or Crappie fillets<br /><br />Season: Salt and cayenne pepper. I mix enough cayenne pepper in the salt to just start it turning pink. You're gonna salt the fish like you normally would so mix in the cayenne pepper to taste. Remember, cayenne is some hot caca but ya want to be able to taste it.<br /><br />Pat the fillets dry and sprinkle tha seasoning on both sides. Now, smear both sides of the fishes with prepared mustard (French's) and coat with yellow corn meal. I put the meal and fish in a bag and shake it up. Deep fry in HOT grease 'till it's golden and floats.<br /><br />Serve up with hush puppies like my bride makes with jalapeno peppers and onions. Killer dose.<br /><br />c/6<br />Hooty

nah, dont flatten the beer, the foam is what makes it a light batter!<br /><br />cajun seasoning should be added to the dry mix, mix well, then add beer<br /><br />dredge those fillets in a little seasoned yellow corn meal before dipping in batter<br /><br />or<br /><br />(for those of us with a heartier appetite)<br /><br /> :p <br /><br />take the dredged fillet, dip in egg, then in italian bread crumbs<br /><br />THEN fry in some 375 oil, initial heat at 395, will sear the fillet and it will shock cool the oil ... since its too hot, it will drop to around 375<br /><br />and yer PERFECTAMUNDO, crack open some more beer and tell em to save ya a couple!<br /><br />(Ive been bamming seasoning into my batter, eggs and crumbs since emeril was a river rat up in mass, lol)<br /><br /> :cool: <br /><br />PS - Peanut oil stands up to high heat better than the others<br /><br />Corn muffin mix makes for a delicious pancake (!) but lousy for fish batter UNLESS you like a sweet batter, drizzle some maple syrup on the bastages if yer gonna go that route, blah (trust me, tried it, didnt like it)(muffin mix, being facetious with the syrup, lol)<br /><br />get you some indian head yellow corn meal, and cut in some bisquick, now yer ready to blow long john silvers fish n chips right off the map! (I go heavy on the corn meal)
