does not sound like an overheat, sounds like the VST is contaminated, the drain is the small pink tube and the screw just above it on the VST, drain off a sample but odds are that filter,the one 4" above the VST, and the injectors are stopped with trash from the fuel.
an overheat would have lit the visual indicate on the tach,set the alarm audible and set speed reduction.
to test remove the temp sensor and install a 2000 OHM resistor acrossed the plug and then short the temp switch pink and black wires and start the engine. it may delay up to 75 seconds to activate above 100 RPM or so.
