Looks like an old reostat, normally used to turn things up and down.

Do you know what it does?

Livewell timer maybe.

I took my tilt trim unit off and the white part of these fits into a slot that?s in the pin that holds the top of the cylinder in place.

Right, so it is a reostat, it sends a signal to your trim gauge in the dash to make the needle work.

rheostat or potentiometer is right but it's technical actual part name in the marine industry is "trim sender".
