Will low Voltage cause Erratic Depth Readings on the depth finder?

Yes.

Yes, but can also be caused by a poor connection, or noise in the line (aka trolling motor connected to same battery)

If this issue occurs at speed but is normal when trolling or when anchored, then an improperly mounted transducer may be the problem.
