I have a 1997 5.7 mercriser inbord out boad. It idles fine but when you give it the throttle the boat will run and the rpms will go up but the speed does not pick up. the first time it did this. I put a can of fuel adative and it help for awhile but it started again

Have you checked your prop to make sure it is installed properly and that there are no warn parts on the prop?

the motor overheats, no it's the prop, yes it's the coupler.

Here are some parts for your prop that can be replaced -forward thrust washer, inner hub, and aft drive adapter. The inner hub will cause this if it is warn. Sounds like your prop is spinning on the shaft under higher RPM?s. iBoats sells these parts and full prop sets.
