If you like smoked meats try this.Find a shagbark or shellbark hickory tree,pull off as much bark as you can reach.break into small pieces 1 or 2", pliers can help as it is hard bark.soak in water 2 to 4 hours.when charcoal is ready drop 1 heaping double handfull on coals in a pile in the center,wait a few minutes for good smoke, add burgers in a circle around the pile.close the lid and open vent all or 1/2,It should smoke like crazy,that keeps the flames choked off. +/- 5 mins. turn cover, +/-5mins done or turn again,I like medrare.experiment w your taste as the smoke can be strong to some.top any way you please.burgers cook faster than normal and you can probly do 2 or 3 batches.Enjoy!
