Sarting my 31' Sea-Ray

Hey guys just joined this site and looks to be a lot of great info--thanks in advance.

Here's the deal:

I own a 1981 31' Sea-Ray Vanguard express with twin 454 merc 330hp inboards. Both motors have been rebuilt in the last 4 years and new carbs last year (quadrajets). Anyways my boat starts very hard when been sittin for a day or 2 and very hard at the beginning of the season. But. Once fired it runs and trolls and idles like a top. I can run 2 trips in a day adn then the next morning it fires again easily. No hesitation or surging at any rpms and can troll at 600-700 rpm all day and not load up at all. Looking for some insite on this???

I have shutoffs on tanks and have tried to shut them off and leave sit for a few days but had the same starting outcome/I have Mallery Distributors that were new 2 years ago and are supposed to be good. (don't know about electonic ignition-my mechanic likes the points and condensors?)

Looking for any and all ideas but I don't want to mess with it too much because the thing is a trolling machine.

From A to B, describe in detail how you try and start your engines, please do not leave out any details.

Ayuh,... Rochesters do have a reputation for leaking off,...

That'd be my 1st Guess, even though you say they're New...

I'd like to know what it means when saying, "they start very hard".

How much cranking and fussing is actually required after a few days of sitting?

Do you do anything to keep moisture/condensation off the ignition system, such as a water displacement spray (aka wd-40. Not calling that the perfect stuff, but just a reference).
