I have a 1993 SF 16 LW and it sounds like it is set up just like yours. I'll take some pictures this weekend and post them to see if its the same boat. I have a manual for it too and it was set up the way you describe from the factory. I think the inly modification on it is the gas tank. Where is your gas tank? The old farmer i bought it from did some changing to the rea seat. It is hinged now and have the gas tank under the seat and there are vent hones cut to allow for ventilation. I have a 20 horse Mercury on it with electric start and I love using it. The hull plat says it could handle up to a 40 horse, but I think that would be way too much motor for this boat. It came from the store with a 20 and I'm very happy with it. Great little boat for fishing, and the live well is very handy. There was a bow operated trolling motor on it before I bought it and it has the plug in up front for it. I have a little Minkota rear trolling motor on it and that does great with the motor up for moving around in the shallows.
I have a swivel seat on the back bench which makes steering much easier. Also my fish finder is mounted to the bench on the port side so when I steer the boat facing that way i can see the read out and drive too.
A far as rod holders go I went with the vertical tube type that hole 3 rods. I put one on the starboard small bench/storage locker facing the rear so I can change rods if I need to easily in the stern, and another on on the forward starboard side seat /locker so my with can do the same. They have been very handy and prevent alot of wasted movement.
I have have to replace the carpet soon, but is is still very clean and in good shape.
The only other addition I've made is a bilge pump. I have not mounted mine though. I bought a simple pump with 4 ft of clear hose and I put aligator clips on the wires. When I have had water in it due to rain without the cover, I just place the pump by the drain plug, loop the hose throught the handle in the stern, and clip onto my battery for power. It has worked like a champ.
