Is that my only option? It's a carbed vortec 5.7 are the timing curves different? Could I just pull the merc system and go with a aftermarket?

Merc doesn't publish the T5 timing curves. I suspect they are different, such as when they were using T4. I suspect you are going with a 4brl, and there is not a Merc T5 module for 5.7L vortec 4brl engines, anyway. A volvo 5.7L vortec timing cure was very close to the old V8-22 used on the non-vortec 5.0L. I think the 5.0L curve will be close enough. That is something you would have to test. Maybe ZB has the experience that says otherwise, though.

what do you think will happen if I try to use the 5.0 ignition on that new 5.7 motor with a ebrock 4 barrel ?

If its a carb model it should work. For the Volvo vortec, I am currently mid way thru this 5.0 to 5.7 litre conversion and even the carbs listed are the same, the settings for the carbs are in the same range too, so I suspect that they are very similar, its only 700cc split across 8 cylinders, so most of the running parameters will be very close. You need to check out the Merc for exact specs, suggest you get hold of a Merc parts catalogue and service manual and compare the part numbers (including carb jects etc) and idle / mixture settings.
