1pc or 2pc jackplate for 40hp 4stroke?

I have a 2000 G3 Deep-v with a 2007 Yamaha 40hp 4 stroke. I'm looking to add a manual jack plate. I'm undecided which one to go with.

2pc jack plate seems to be cheaper but will they be strong enough for my combination? I assume they are but is there any drawbacks to using 2 pc jack plates? My motor is close to 200lbs. I would like to add the least amount of weight to the transom I can.

I'm willing to spend more money on a 1pc manual jack plate, but if the 2pc design will work with no issues, certainly I would rather save some money and weight.

I'm not sure at which point it becomes overkill...for my setup. I don't want to skimp and have issues later but I also don't want to get something way more than I need and add more weight needlessly.

Any thoughts?

Thanks so much

What is the reason for installing a jack-plate on a deep-V, are you just looking for the offset?

Actually, the main reason is I need to move the motor back so I can move my seat back...I'll explain..
I sold my G3 deepv with a 25hp yami and bought my buddies with a 40hp. His 40hp needed to have a big tiller handle which required the seat to be moved up to operate the motor. This would not be a problem but I also use this boat for duck hunting and just by moving the seat forward, makes hunting 3 guys tough. I really need to move the seat to the rear more.

So that is main reason and the second to be able to squeeze a little more performance out of the motor.
