I've restarted this old motor that has been in storage for 15+ years... I've taken the carb off... What's a good product for cleaning? Are Mineral spirits ok, or should I buy a carb cleaning product? Also, can/should the fuel pump be taken apart for cleaning as well?

When I had the motor running in a barrel, there was some "bubbling" around the gear shifter. Does this suggest that there could be water in the gearbox? I haven't changed the gear oil yet.

Thanks for your help

I would suggest a 'bucket' of carb cleaner from the local auto parts store. After removing all rubber/plastic bits from the carb, dunk it in an let it soak according to directions on product. Blow out with compressed air afterwards.
Would be worth checking the fuel pump diapragm while you're at it. Some also have fuel screens under the cover. As for the LU, by all means check the oil for signs of water contamination. Could just be a little exhaust burping from around the shifter.
