Quick update: I went for another test drive just now and this time things seemed completely normal. Previously, the boat was definitely running weak (20 mph @ 4,000 rpm). This time, it was running stronger (22 mph @ 3,200 rpm, 26 mph @ 3,500 rpm) and the engine sounded better...
Thank you for the response. I don't think the temp gauge shows cold. What do you mean by a bad connection?
I'm thinking I'll take a video next time I try the boat so I can look back in more detail at what happens with the gauges when the issue occurs.
