1957 evinrude fastwin carb rebuild

I am in the process of rebuilding the carb on a 1957 18hp fastwin. I have a question on the high speed and low speed packing. Do I use two packing washers and then a plastic washer to help protect the packing?
Also, do i only need the 3/16" thick rubber washer on the outside of the jet or is another washer required? It's a fairly tight fit getting the top and bottom of the carb attached with just the rubber washer, must need a good seal.

The plastic washer is not needed.

There are no jets on that engine, just adjustable needle valves.

The only rubber washer that I can think of is the one that fits up against and inside of the faceplate of some models to keep it from rattling... that'll have to be your judgement call to make.

i usually use 3 packing washers on both needles, but 3 are not really needed....and as joe stated, no need for a nylon washer.
assuming that when you mention the thick rubber washer.....its the boss gasket that goes on the hs nozzle? if so, you should have to use the bowl screws to get the bowl to seat against the carb body. ( i have had aftermarket kits where the boss gasket was to thin and i had to use one of the extra packing washers under it to make a good seal.)
