would a 1970 model be a good ‘parts’ motor? I found a working but ugly 1970 and am thinking of buying it as a parts motor for my 66 Big Twin. Are the parts interchangeable?

The engine in the pic is 68, or at least the engine cowl is.

Most parts will swap, The were some difference to to things like water pumps and gear shift mechanisms during the 66- 67 period

I think most parts will interchange.-----That is if the 70 model is standard shift.

Some of them were electric shift during that period. If it has a shift lever on the side it is a standard mechanical shift.

"Big Twin" and "Big Twin Electric" (start) were standard mechanical shift with a shift lever on the side.
"Lark" was electric shift (no shift lever).

Except in 1962 when there were Two Larks, one Mechanical shift, the other Electric Shift.
