1972 uniflite 23' hard top v-drive

I've recently picked up a 23' uniflite with a Chrysler 318 and paragon v-drive, and a 15hp 4 stroke longshaft kicker.
It does 18 knots at 3400rpm.
My plan is to turn it into the ultimate fishing machine. The boat is dry and solid. The rear deck is marine plywood with awlgrip. I'm looking for ideas for the gun whales, and interior. I'm getting fabricated a 1.5" powder coated aluminum tubing rail for around the fishing deck with metal plate welded on, drilled for my 3 Scott down riggers. I'm also getting a stainless arch on top of the hardtop with a radar base and 6 rod holders.
Now the interior seems terribly laid out. The helm is very bulky and the storage is sloppy. I wouldn't mind redoing the whole thing with a fishing tackle locker behind the helm.
Any ideas or recommendations on materials? Flooring, cabinets, seats.

not a bad looking boat, i almost bought one on Craig list here in Florida but i wasn't too sure about it.
