Impeller replaced, good discharge (not very hot to touch); replaced head gaskets; removed VRO (one less thing to go wrong); installed temp guage mounted to one of the cylinder head bolts (reads in C and F) The overheat warning alarm goes on about 176F. I've looked at a couple manuals and I haven't found anything definitive as to the correct operating temperature and 176 doesn't strike me a particularly hot. According to one of the manuals I read it looks as though changing out the termostat and the temp sending unit are a bit involved--a lot more involved than changing a thermo on a car-- Did I misread the manual (it was one of these Clymer manuals that covers about a number of other models and years.)
I am thinking about disconnecting the tan wire from the temp sending unit
1. what is the "proper" operating temp
2. what is the difficulty level on changing out the termostat and temp unit (any special tools involved ?)
3. Is there a problem operating the engine with the temp sending unit (the tan wire) disconnected

thanks in advance for any responses

As I recall there was a service bulletin on changing the temp sender, as original was to sensitive. Temp should be about 163 degree's. Do not disconnect the tan wire. If these engines overheat they can fail in a hurry.

One more thing, is the tell-tale indicator tapped into the top of the block?

Besides the service bulletins, the factory has a heavy duty water pump kit that includes the fittings for the relocated water tell-tale and a heavier spring for the increased water pressure against the thermostat, part number 432955.

T-stats are easy to replace if you follow the manual. I agree with RJ on not disconnecting the tan wire. Also 176 deg seems high.
