2000 Mercury xr6 150 hp hesitation and stalling out on hole shot

Just this year my Mercury xr6 150 hp has started to hesitate on the hole shot and will stall out during hole shot at times. The motor starts right up at the turn of the key and runs fantastic at WOT. Early this year things ran great, but then I was getting an erratic alarm, so I immediately took it into a mechanic. The mechanic checked over the warning horns and oil jug on the motor, but everything was fine. Then he found that a gasket in the lower unit had gone bad so there was water in my lower unit. The impeller and gaskets were replaced and I haven't found anymore water in the lower unit, but the hesitation at hole shot was still there. I checked the spark plugs and they seemed to be wet with oil on them. I replaced them because I bought the boat last year and not sure when they were last replaced. Still hesitation at hole shot....Checked compression and all 6 cylinders were at 110. Spark on all 6 cylinders as well. New plugs were still getting a little wet with oil and fuel somehow. Adjusted carbs a quarter turn thinking that maybe it's getting too much fuel at hole shot, but not change. I've run a can of seafoam through the gas tank, but I'm still getting a sluggish hole shot and occasionally dies out. I bought the boat last year and have had absolutely not issues so this is pretty disappointing.

Also, I'm a little concerned with only getting 5200 RPMS and 55mph on the top end. I feel like I should be getting more than that. Right before I bought it the guy showing it to me ripped the lower unit out putting the boat onto the trailer. I told him I wouldn't buy it unless he put a new lower unit on it. He did put a new lower unit on it a few weeks later, but I believe it's a lower gear ratio like 1.78 or something. It was a new lower unit, so it's not used or re-manufactured.

Any help with any of this is greatly appreciated as I fish tournaments every week and do not have a ton of money to put into the boat. I just want to try to take care of this boat and make it last so I can stay on the water. Thank you.
