my engine stalls when I go to throttle up ..i have to be very careful on how fast i push the throttle ahead....it stalls with a sneeze sound ...

Sounds like the accelerator pump (in the carb) not working properly....

so what do I need to do with this replace it or is there some adjusting I can do with it...

A bad accelerator pump needs replacing. And while you have the carb opened up to do that, clean it thoroughly and reassemble it with a rebuild kit. If you are notcomfortable with that, then it's a job for the shop. You cannot adjust for a bad pump/dirty carb.
