22' deck boat 25" shaft motor on 20" transom

Ok I been researching the past for days on this. I'm having such a hard time finding a 20" shaft v6 motor for under $2500. that's decent so been reading that if I use a manual or hydraulic jack plate I can use a 25" shaft motor but some say you loose hole shot performance, top end speed an weight distribution plaining problems but others say it fine no problems blah blah. I have a 1999 Spirit funsport 215 an its rated for a 150hp, max 200hp. So looking for other deck boat owners or previous owners to chime in. What will I loose by using a 25" shaft motor on my boat compared to a 20"? A mechanic told me if I find a v6 mercury 25" motor that's decent that I can take off the 5" adapter plate where lu connects to mid section an swap it with a good used 20" lower unit?? Please help

Florida, be spending most my time in the gulf. But I did just pick up a boat that has a mercury 135hp with 20" shaft. I'm thinking be a little under powered for my deck boat. So still might do the above plan with the 175hp mercury but has 25" lower as of now.
