Yes, you absolutely can!
Swap out the freeze plugs, put a set of composite head gaskets on there, and go to town.
Just make sure your engine accessories are marine rated (distributor, starter, alternator, etc).
If the engine is out of a car, and not a truck, you'll probably want to swap out the cam for a marine/truck/RV cam.
