Sounds like you are running out of fuel from the carbs. If you have not done so, install a clear fuel filter between the fuel pump outlet and the carbs' inlet. Monitor the clear fuel filter when you get on plane and see if it stays at least half full. If it doesn't then you have a fuel delivery problem, i.e. leaky fuel hose, faulty fuel pump, clogged suction line, etc. if it stays at least half full, then you have carburetion problem, i.e. the floats are not adjusted properly, or inlet needle is stuck shut, etc. . .

Check the diaphragm on the fuel pump. If its cracked, the motor will do just as you described.

Also check wire movement near the flywheel. Might be a rubbed bare section shorting out in the full throttle position.

When your going to check every inch of wire, you need to remove the flywheel so you can see all the ignition wires well.
While your in there ,are there any burn marks is stator ?
Are the magnets ok on the flywheel, are they still glued down and tight ?
Pull every wire hard that goes into a connector,or shrink tube.
Sounds like your not getting gas.

Don't remove the flywheel unless you test the electrical system first.
outboardignitiondotcom has procedures for your motor.

There is 1 magnet on your flywheel.
If it was loose your motor wouldn't run.

Do a compression and spark test.

It sounds like your fuel delivery system is faulty.

Is there an inline fuel hose connector? replace or just cut it out.
Check the fuel pump diaphragm.
