9.5 johnson seahorse rebuild!!!

Hey folks so im currently looking to rebuild my 9.5 johnson seahorse i believe its a 1969. Any how im pritty new to the outboard world as I have never ever attempted a rebuild.
I got the motor for free off of a family member and it did start at one point but i was told the timing was off and possibly the bearings may be shot in it this was 2 years ago.
Fast forward to now and i have a 1959 5.5 evinrude and the johnson sits in the garage collecting dust.
I dont think id ever get rid of the 5.5 that thing is a solid motor but in the end it doesnt get me around quick enough.
So this is why I have came here the 9.5 needs WORK!!!
SO far i have removed the flywheel, ignition system, i dropped the lower unit did the things i know how to do...i checked the compression on both cylinders and they are both 65 psi. So im assuming new rings at the very least but it could be way worse.
After the work i have done now what are my next steps?? Do i need to take the casing off thats around my motor ?

i just removed the lower cowlings. The motor is now bare boned with out the lower unit and the lower cowlings are off. Carb removal etc is going to come. What sort of gaskets do these things need i know ill need a new head gasket but could i get away with just using the gasket sheets you buy and then you can cut your own out??
