'95 Merc 200 issues

Hi,
I have a '95 model 2.5 liter carb motor and have a couple of issues:

First of all the motor doesn't like it idle for very long and will shut off with difficult restart if the weather is warm. From my readings here this could be caused by carb and switch box issues, yes?? Gimme you're .02 on where to go with this when I get home on vacation (working in Afghanistan)
Engine overheat is not causing this issue (discharge is not burning my hand on restart)

Secondly, when we bought the boat we were assured by the private seller that all was well, ran the engine on ears but when taken to the river the foot would not shift into gear. In troubleshooting this issue I found out the shift linkage had not been aligned the last time the foot was taken off and corrected that issue. Took the boat back to the ramp and it started overheating when put in gear on the trailer for a test run. Upon inspecting the engine I noticed the overheat sensors were gone from each head and a gauge type had been installed on the right head. Long story short, after machining the head and installing a new head gasket the motor runs fine except for the idle condition. Having said that I'm not running any thermostats and the water pump stuff has been replaced. It will steam on the ears with new thermostats installed so I decided to play it safe. Engine has only been run in summer salt water since I've owned it. (24' Hurricane Deckboat)

I get no beep when the key is turned on and plan to reinstall the proper heat sensors on the head. My question is, because these are gone will it keep the "all is well" beep from happening. I'd like to restore the system for overheat and low oil level warnings, though we keep the tank full. I assume the 2 sensors are "y'd" together and ground the sensor wire in case of an overheat but have not verified this. I ask about the beep because with the switches missing it would seem the system would still operate. No alarms, no noise, no nothing :(
Some wiring schematics would be most helpful or a link on where to purchase the correct manual for my engine would be most appreciated.

Found a good manual site (FREE to boot!!!) , got wiring diagram and carb ops. I surmise the thermal idle valve thing has failed and makes it run rich when warm. Alarm thing should be gravy (I fix electronics on helicopters :) C'mon June!!!!
