You can, but you will have some steering pull issues, especially if you don't have power steering.

Out of curiosity...what the heck does the anode trim tab do? And should it be centered? My trim tab points about 10 degrees to the right,

If you have powersteering, the anode is more of an anode, and less of a trim tab.
They do sell flat anodes, but I still use the trim tab style, as it simply has more zinc material than the flat ones.
If you have powre steering, just point it straight......and enjoy the ride.

Two things.

The "anode" part guards against corrosion, especially in salty, or polluted water. The anode gets corroded instead of the housings, which are a teency bit more expensive. They're also referred to sometimes as "sacrificial anodes", and you likely have several more lurking on your outdrive.

The trim tab part of it helps counter the boats tendency to pull to one side.

I'd not mess with the setting, but as said earlier, it may not make any difference depending on your boat. But it was set to that 10 degrees by someone.

My boat has power steering, and the trim tab is offset as well, I just leave it be.

being "set" to a position, is as easy as just not paying attention to it when the last person bolted it on.
Also, they can easily spin, if it's not bolted tight, and if there's no locking groove (as some brands of zincs don't have).
I had 2 trim tab zincs loosen-up and fall off my Alpha. I even use a large wrench on the allen key, to tighten them.
The ding up the prop, too, when they loosen...
