The transducer emits sound waves; not electromagnetic waves. The coatings should have no (noticeable) effect on performance if they are applied without inducing air bubbles (which compress and absorb the sound energy rather than retransmitting it).
Paint it. I mean like if you can shoot through an aluminum or fiberglas hull, you can surely shoot through a coat of paint. I have personally shot through both with no apparent degradation.........but I don't sound to 300 feet either. :%
