Do what Bubbakat said (the rip thing).
Wrap 'em in foil with a good dose of garlic cloves, rosemary twigs, lemon juice, and if you got it, some chiletepin vinegar you made or substitute a however much you like similar tabasco juice and add just enough olive oil to make em stew insinde the foil. Wrap all that up tight then put it on your grill for about 15-30 depending on how hot she is.

The foil idea sounds great, may try that one next. Fried about 15 the other night, and tonight i am trying something new. It is a recipe that i use for grilling the tenderloin of the deer i shoot. i will take the meat and marinate it in equal parts of red wine, rice wine, and some good quality extra virgin olive oil, also put some ginger and salt and pepper. then grill it for about 20-30mins.
Hope this tastes as good as the deer. thanks for the ideas.

Re: Any good Dove recipies

Deer tenderloin. **** , I miss my childhood. Used to crawl around my Grandma's place near Marble Falls, Tx all the time and get the deer. That tenderloin steak is the stuff. Then again, I got into the habit as a teen to taking neck shots because you either miss 'em or drop 'em. Grandma got ticked at the neck shot deer, because that neck makes one HECK of a fine roast in mustard sauce during the winter. Then again, a heart shot got Dad's gander because that's the best sausage meat. I resorted to getting deep in the brush with a little .357 snubby and got a few with headshots. So I come back home with the deer all field dressed and in the tree ready to skin and quarter the next day. Hey, the best of both worlds, right? You got all the meat. Then when I'm going out the next morning to skin and quarter and get ready to cut up I get the "that's gross" reply looking at the head with the top blown off.
I found the medium: A .44 mag 7.5" tube iron sights shoot the head and cut if off and leave it with the guts. The pistola gives me about 30 yds of good going (fine in the Hill Country brush) and makes everyone happy.

yes it takes a lot to fill me up. the limit is 15 here in OK daily, 45 total in possession. but i usually get the 15 limit per day and they are gone the next day. it takes about 9-10 to fill me up and 5-6 for the lady of the house.

tried the foil, was pretty good. also tried the same recipe as the deer loin, this was excellent.

thanks for all replies

Ingredients

Front part of dove-no feathers please. ;)

Pick up tailgate.

Hibachi grille, w/charcoal and lighter.

Tupperware "sealable" container.

Italian Salad Dressing.

Cooking:

Marinate the fronts in the italian dressing for at least one hour.

Get the grill good and hot and toss them on, just as they come out of the marinade.

Hint, the pick up tailgate makes it more fun. I've always eaten them like this, out in the field. Makes a great, end of hunt, snack.

Marinate the doves in teryaki sauce. Take a water chestnut and a piece of dove, wrap with a half piece of bacon, skewer with a toothpick. Sprinkle with brown sugar and broil in the oven till the bacon is done. Good eating!!!

Ill let you know as soon as I get more than two per day. With the spotty birds on my lease, and my bad shooting, I'd be dead by now if I had to depend on them for food.

Now a goose about 15 feet above my head.... Maybe

Ken
