Boat is a 2000 Seafox 195 BayFisher. The 115 Johnson sits on a Bob's Jackplate. Currently the boat tops out at 38mph (1/2 tank fuel and myself on board). I am not sure what the fuel consumption is at this point, but I have a Floscan to install later this week to help answer that question.
My plans are to add a T-top and some extra #'s with a modified center console (cooler and storage for cast nets and such). Currently, the boat is fine with 1 or 2 people on it, but when I have 4, the motor labors a bit more. My goals are to increase speed and maximize fuel economy. Prop is 13.75x15 aluminum, and I reach top speed at 4700 rpm and about 75% throttle. If I went to a 17" prop, I am figuring I would lose too much from the hole shot, and a 4-blade wouldn't get me the top end.

well I wont use one...but i DID use one!!!
if you went with a SS prop in the same configurations I bet youd pick up 3 mph...and get into the 5,000's in rpm...
I have always heard that those 60 degree motors like MORE rpm, rather than less...and many recomend to run them at 6000 rpm
I have that prop( ss 13-3/4" X 15) and I put it on my 95 115 ocean runner and it took me from 5400 rpms and 36 mph out of a 14X 17 aluminum to 6200 rpms at 39 mph!!
but since i run shallow and banged my prop and damaged my lower unit, ill never use SS again...props are always cheaper and way way way faster to get going again, than a lower unit repair!!!!!!!!!!!!!
I like the performance of the SS and knew that i wouldnt run it at 6200 normally but once i loaded my boat it would fall back into a safer range....and it did!!! onc eloaded for use the rpms fell back to 5800 rpms !!!!
and forget about going to the 17 in aluminum...youll lose even more rpms!!!!
