AQ125B Overheating issues

Hey everyone, so after doing some pretty major overhauls to my AQ125B I finally got it running to find out that it's overheating. Temp gauge is reading 210 degrees plus.
Sending unit is Volvo but gauge is Autometer. I've read this could give inaccurate readings so I'll be getting a temp gun to verify temp accuracy between gauge and sending unit.
Water pump, Impellar and Stat (180 degrees) are all brand new. However I did drop the stat a few times before install accidentally.
**Any possibility that I broke the Stat?
Overhauls include 531 head from 530 head, "V" cam from "A" cam, Dual carbs from Single Carb, new head gasket. Almost certain I installed the head gasket correctly.
**Any possibility that the motor is making a touch more power that the exchanger can't handle a possible heat increase?
I verified that I am getting raw water into the heat exchanger. I wanted to see if I could verify coolant flow by leaving the expansion tank cap off but didn't see what looked like any type of coolant flow.
**Is this even a good way to verify coolant flow?
I'll be replacing the bellows next. Pretty sure the intake hose at the drive is okay as well as the rest of the raw water system.
Anything else I'm missing?

take the heat exchanger in to get cleaned.

that heat exchanger will cool two motors if its clean.

also, make sure the raw water connection on the drive has been replaced.

Thanks, I'll get those two things done.
I also noticed that coolant runs into the dual carb Intake manifold. The head has a coolant opening near the number four intake, however where what looks to be another coolant opening near the number one intake, that opening is closed/plugged.
**Should both of those openings be open so coolant runs through the intake manifold instead of just sitting in the manifold??

Just an update. The problem was the Autometer gauge in relation to the Volvo sending unit. Once I replaced the Volvo sending unit with the Autometer sending unit the problem was solved.
