Bad Thermostat or Normal

I have noticed that sometimes if I hit the throttle to get on plane (maybe up to ~3600RPM) before the thermostat opens the temp will go up to ~180*.....then comes down to 160* and stays there.

BTW it's got a full FWC'd set-up.

Yes, that is the 'heat' coming out of the engine block . . . sort of all at once as the thermostat opens.

That's the same thing I"m getting (although different temp range - 160 to 130). Perhaps it's partially because our water is so cold - 50 degrees. I heard that thermostats stick sometimes, and I'm just replacing mine to be safe. I don't have enough experience yet to know if it is normal or not.

Sounds like the thermostat is sticking. It should open slowly as the temp rises in the engine. Not suddenly.
