So I will be replacing the bellows and shift cable on my boat that has an Alpha I Gen2 outdrive this off season. (Thanks millenium3 for your video) I've got the Merc service manuals so I will get the details from that, but just want to get the sequence correct in my head of what works the best for people...

This is my high level sequence. People who have done this often, let me know your feedback. Thank you!

Break free the hinge pins while the drive/rams are still on.
Place in forward and remove the drive.
Remove the shift cable from the engine compartment (attach a string to it to see the routing on install)
Remove the hinge pins
With the bell housing free cut the U-joint and exhaust bellows and water hose in half to facilitate removed of the bell housing.
Detach the shift cable bellows from the transom.
Disconnect drive oil hose from the transom. (Is there a speedo hose that needs disconnected as well?)
At this point the bell house can be removed. Remove the bellows and water hose pieces.
Install the new U-joint and exhaust bellows and water hose to the transom.
Put on the new shift cable bellows on to the shift cable.
Attach the shift cable to the bell housing and feed the shift cable through the transom.
With the hinge pins holding the bell housing, fasten the bellows and hoses to the bell housing.
Tighten the hinge pins.
Align and reinstall the drive.
