Welcome aboard!

Is there a tension adjustment knob on the helm? Or is there a place (usually on the bottom) where there is supposed to be? Worst case scenario, you'd need a new helm, but it sounds like your cable is okay.

How did you adjust the fin? Did you move the rear of it in the direction the boat wanted to go.....if you turned loose of the helm and it wanted to go to the right (starboard) did you move the REAR of the tab to the Right?...how far if you did?

Otherwise you have another problem. Friction on the system is not the right answer. weight distribution, skeg bent, da de da....who knows.

Does the helm spin when it goes to the right? If so it's probably what Mark is asking you about. If it doesn't then it's a hull problem. Have a look at the bottom.

Same direction boat goes. Think about it.....if the boat is turning to the right, the engine is turning to the right (viewed from behind it looking forward) to make it do that. What you want to do is to make it stop doing that so you want to move the engine back to the left toward the centerline. If you put the rear of the tab to the right, it will contact more water from the right side and get more pressure against it from that side pushing the engine over the other way.....toward center.
