can I move the captains chair and console?

I just bought a gregor 25 foot pontoon and the console and chair are centered on the boat, I would like to push them to the side to open up the boat and make more use of the space.

It can be done, but it may be a big job. You may have to extend the wiring harness and the engine controls and steering cables.
look below deck and under the console to see how much slack in the cables and wires you have to work with.

just looked and it seems there is enough extra in all the cables to slide it over, now I need to figure out how the console mounts to the deck

Most consoles are screwed or bolted to the floor, atleast on the boats i've had. If it's bolted it's much easier to have a friend go under the boat to help out.
Just disconnect everything, then decide where you want the console, then drill a hole and pull the wires up....connect everything and secure it to the floor. You will have a hoel in the floor from where the old wires came up to fix.
Also make sure you are aware of your weight balance....if you move it to the right you might want to relocate you batteries to the left...ect.

Can move it as far as the steering / throttle / shift cables allow. Not a hard job. Helped a friend do this same thing on his 24 ft toon.

Moving from a center to one side is normally a bit of work but the cables and wires should be ok
