Canning Question

I'm starting to get plenty of tomato's off my plants now. More than the Mrs and I can consume. What I'm wanting to know is how to prepare them for canning as sauce.

Do I juice them and freeze it and then keep adding more as I get more tomato's that rippen? Then once I get about a gallon of juice I wish to cook it down into sauce and then either can it or freeze it. I don't want to waste the maters waiting for more to rippen.

I really miss grandpa's stewed tomatoes, boy were they good in the middle of winter. MMMMMM :)
If you are interested I can ask my mom for the recipe, I am sure she has it somewhere in that library she calls her cook book.

Sure, I like getting home cooking recipes. I made some sauce for some spagetti last weekend. For once, there wasn't any leftovers :D

I'm amazed with these Brandywine heirloom tomato's. Even the 2lb'ers have very few seeds. I was hoping to get enough to plant about 100 plants next year. I just don't know how I'm going to keep up with them. Just may have to hire a couple of teens to help out. That is how I learned how to grow them. My plants now are a tad bit over 9 feet tall. They are actually up past my gutter on my house.

Around here planting is usually the may 24 weekend as there is usually no frost past that point.
(we are about 2450 foot elevation, down town is 1160 feet)
Our maters are about a foot high and the fruit is about an inch to an inch and a half, should start seeing some great beefsteaks around mid sept.
Or just go to the farmers market as they are picking them just south of were OOP's lives.
oh, sun up here on the hill is 0400 +- till 2200 +- this time of year
(dawn to dusk)

After I get enough juice saved up by freezing it, I plan on cooking it all down into sauce. That is when I will can it into Ball jars. I called an old friend of mine at a nursing home. She said what I was planning to do would be fine. She said that the juice will be okay, but it may not be fresh as if it was done right after juicing them and cooking down. Right now, I'm only getting 4 or 5 ripe maters about every 4 days. These will yield about 1 quart of juice. Once a quart is cooked down, it might yield about 2/3's of a pint of sauce.
