Carb Help

Hello all, Stupid question. I am rebuilding '64 18hp fastwin. I have never rebuilt outboard carb. When I split it open the jets are huge. What am I supposed to be cleaning out? On dirt bikes the needles can barely fit a single strand of wire. Am I missing something. Thanks in advance.

it has adjustable needle valves rather than jets persay. 64 may have the fixed high speed jet behind the bowl drain. read the Top Secret File, top of forum.
