As in my profile, my boat has a side console, and I do alot of boating myself, now Im no small guy so to even out the boat I have to sit in the middle......... what a PITA..... I was thinking of taking the console down and moving back towards the rear of the boat(in between the 1st and 2nd bench seat) building a center console. it will free up the whole rest of the boat, and Correct me if im wrong I may goa little faster as the back of the boat will be lower in the water. Can this be done?. What do I do with the extra cable, as my steering appears to be 1 piece hydrolic steering.......any pro,s and cons to my plans?

Sure you can. Here's an example of one.

http://cgi.ebay.com/ebaymotors/ws/eBayISAPI.dll?ViewItem&category=26430&item=2428846922

The steering you have is a push pull cable type. You may need a new cable-about $100.00. You may also be able to use the old one if you put a "gentle" loop in it.

Be careful about putting to much weight aft.

You can see other center consoles by going to ebay and use the search words. "boat center console". There are some premade consoles for sale there.

My hats off to who ever desgined my center console as it does two things.
A: Keeps the weight in the center and
B: The bow can be going up as high as 3 feet and then slam back down in ruff water and the driver just stands / sits.. no pounding at all!
Just two more pro's if you can get it set up that way.
Most boating mags have pre made center consoles

Link
