Growing up in Cincy Ohio one of my favorite foods was Skyline Chile, or Cincinnati Chile. We just made a big pot of it last night and it reminds me of home. Anyone who has ever tasted it knows what I mean. I like mine Chile spaghetti cheese and onions. I probably made 15 batches before I even came close to Skylines. BTW don't let anyone from Indiana tell you its Indiana Chile :D

C'mon Tylerin, share the recipe. Your such a tease. :) <br /><br />Does it have kidney beans? Although thats a real no-no here in Texas, back in NY chili was enitrely different. I love them both. I've never had Cincinnati Chile and would like to try it.

OK L/F you got me. When I said we made it I meant I only taste-tested the product. It ain't easy getting a Ca. girl to make good Cincinnati Chile :D

Well, now you've done it. I'll be on the hunt for Skyline's recipe. I never heard of such a thing spaghetti and chili??? :eek: <br /><br />I know some Texans who serve it over rice and I thought that was odd.

I was born and lived in Cincy for 24 years and was rraised on Skyline, love that stuff. Over the years I have tried to make it unsuccessfully, Albertsons used to sell a dry pack of the seasonings and you added the beef - it was close but nasty. Now whenever I go back there I throw a case of cans in my trunk, although its not the same, and its the first place I eat too.<br /> Hey tylerin - If you like that then you probably are a fan of Goeta too?? I also grab a few pounds of that to bring home for breakfast. Making me hungry......

Hey Tylerin, Long, long, time ago when my dad drove truck, his buddies and him talked about Cinci Chili. I would never want it cause they told me that they made it from fresh road kill. Stupid me, I believed them! So now I'm going to have to make a trip down to the river. Or I just might have my wife make a batch. Thanks...I feel my guts growling already! Where's my prevacid?

Been to Cincinatti many times on business and have tried the Skyline chili several times. I'm sorry, but nutmeg in chili is not a good idea. [to me, anyway].. Tex-Mex chili with plenty of peppers is the way to go. Over rice, by the way.<br />They do have an outstanding barbeque place, Montgomery's, if I'm remembering right.

Link- no I didn't use this recipe but its identical to the one I have. Schillings use to make a packet you poured in but I can't find it anymore. And it tastes similar to Skyline. Most recipe's have you cook it for an hour or so but I know my Grandma cooked it at least four hours. It doesn't have nutmeg (some recipes do) but it has Allspice which has nutmeg in it (I think)<br />GT150-, yes I've eaten Goetta on many occasions, Its oatmeal and pork scrapple left to cool and fried up the next day. I love it but it must be an acquired taste.. Blacktie- nothing beats a 4way :)

Link, LF does'nt put rice in unless the son-in-law is coming over. He's a good man but I think he requests stuff just to get a rise out of his MIL. The thing is that she loves him, Jackie & the kids so much she will cook what ever concoction they come up with. <br /><br />In any case, she's had a full day on the water and is currently sacked out on the couch with a bad case of heartburn so you're safe for a few hours. :D

You forgotone important ingredient...Cinnamon. That with chocolate and finely ground beef.

Cincy chille rules. I was born and raised here most of my life. <br /><br />Also, you have to eat at White Castle when you visit here. Very nice stuff to keep you regular. :D

hey wheres the pound of suet? you cannot have a good chili without all that grease. around here we have a place called chili johns. he makes the best chili i ever tasted. in fact its about the only chili i like. i have the recipe and make it all the time. real spicy and real thick. you basically make the meat sauce and serve beans and spaghetti on the side. the more spaghetti you use the less hot it is. i never use spaghetti just some beans, cheese onions and maybe a few oyster crackers. good stuff think i will make a batch tonight. and with all that suet in there it also gets ya going and keeps you regular. :D
