Cleaning Heads for new gasket

What is the best method and products for cleaning the heads and block in preparation for new head gaskets?

I put some 320 grit wet dry on a peice of marble tile and sanded/flattened the head on it and took a small peice of tile with some sandpaper on it and did the best I could on the block after scaping old gasket off. the head came out nice and clean AND flat, the block was more difficult.

Be sure to thoroughly wipe out the cylinders to remove the fine metal particles before re-installing the head.
