Couple questions need help with. 90 mercruiser

First question is first time putting in water after flywheel change, soon as pull from dock the temp gauge is raising at idle an low rpm. Running almost max on temp gauge but soon as you throttle up keep high rpm it runs 180. Don't know the actual name of part but the tubes coming off the exhaust manifold both side are hot! What do i need to check or fix?

Second question. Its a 90 4.3 v6 mercruiser the engine sound is loud when going up lake. You can't hear each other there is a motor cover that's fiber glass, i had 86 model same motor an all wasn't that loud but had a wooden engine cover. Are they supposed be that loud.

Third question is it takes forever to get it to plane out. It's a welcraft eclipse cuddy cabin. I do know the point that comes down by propeller is broke completely off think called the trim tab. Who ever had it before had the fins bolted on the sides but took them off an they added some metal peice that called skeg hard.
New to the form sorry if this wrong place.

Ayuh,..... Welcome Aboard,...... 1st, change the impeller in the raw water pump, mounted in the lower unit of the outdrive,.....

2nd, Is the foam or isolation glued inside the motor box,..?? probably should, or used to be,....

3rd, ya might have to much prop pitch, or the motor's down on horsepower,.....

Is replacing the impeller hard..
there is no insulation on inside of motor cover
