Next to walleye, crappie are my favorite fresh water fish on the table. Because of heart disease and diabetes I shouldn't eat them fried so I broil them in the oven with garlic butter and parsley flakes.

I've had about three crappie fries this spring. If you can call the weather we've been having spring.

Looks yummy.

So that is what they are supposed to look like. I have been trying to catch them but certainly not succeeding like in years ago. Of course I guess you actually have to go fish for them too... Maybe that's my problem. Between my boating project not done yet and all my other options fizzeled out too, I haven't been so lucky this season. You're a man after my own heart (make that stomach)... When I say I had a crappy fishing day, that is exactly what I mean too...not like what you’ve posted. Great looking display of fine dining... :thumb:

Our recipe for the Crappie. Lemon pepper seasoned flour, then washed in Frank's red hot mixed in with the eggs, dredged in Panko and dropped in 350 degree peanut oil. Crispy and light table fare.

I bake my walleye fillets in new wave oven, all seasoned up and delicious.

Oh yeah, I dare say that Walleye are the very best freshwater fish to grace a table.
