Re: deer recipes

1) If venison has not been frozen I trim off ALL fat, slice it about 1/4" thick and cook it fast in butter in a very hot fry pan.season with salt, pepper and onion flakes.
2) If it has been cut and frozen I sauté it in butter on low heat smothered with onions.
3) put a layer of venison in a baking dish and sprinkle with salt, pepper and a little brown sugar.repeat for 4 or 5 layers. cover and let stand in fridge for three days. stir daily after the first day. Grill and enjoy.
4) slice 1/8" thick and find a good jerky recipe. This will not last very long around kids.

Re: deer recipes

I treat venison as I do lean beef or veal (in the case of young does).

Use it like beef in chili, stew, soup, burgers.

The tenderloin I slice about 1-1 1/5" and broil just like a filet mignon, except it is filet bambi.

Re: deer recipes

Take a whole hind quarter....rub it with olive oil, crushed garlic, fresh rosemary, salt and pepper.Bake at 325 until done to medium at the most. Use a meat thermo.

Also try this.....cube up venison, fry in olive oil with garlic, onions, salt and pepper...cook over low heat till well done....then add a bottle of your favorite bbq sauce and mushrooms(if you want)...cook over low heat until it breaks apart. You will end up with pulled bbq venison....eat it how ever you like.

Re: deer recipes

Most people toss the ribs in the trash but they are really good if you soak them in bottled Italian dressing and grill them until all the fat has melted off. Use a little beer to put out the flare ups and cook them VERY well done. They are great to nibble on while hanging out drinking beer. If you try to eat them before the fat is gone you will end up with a thick coating of tallow on your teeth when you take a drink of beer.
