Determine Motor Height on Transom

Can you tell me how to determine the correct height the motor should be on the transom? I have a 50hp Mercury mounted to a 17.5' Generation 3, modified V, Aluminium. As a point of reference, the plate above the prop is approximately 2" above the bottom of the transom. I am having problems trimming the boat out and I believe the motor is sitting to high on the boat. Right now, the motor is on the 3rd set of mounting holes. Also, how do I do this without getting killed? I thought about using my floor jack and a 2 x 4 combo against the bottom of the motor mount...then I thought that I better ask before leaping. Also if you have any spare rain; send it to Nashville. We are so dry down here that I caught a catfish the other day with chiggers!

usually the starting point is even with the bottom of the boat, then going up when gaining performance. its probably best to ask this in the prop section, there's some good help there about engine height performance etc. they will ask about max rpm, hull condition, waterlogged foam and top speed.
when i removed mine, i used a strap and a block and tackle from above.
