Dies under load

Engine model is 502BPRMED
Ford 302 (5.0)
Holley 2300 carb
OMC Cobra
Problem:
The engine dies going into gear. On muffs or in neutral it bogs down when accelerated. I took the accelerator pump cam out and it helps but starts to bog around 2500 rpms. The carb seems to be running rich. The idle adjustment screws also don't seem to make much difference. Curb idle has the desired affect. It also guzzeles the gas.

History:
New to me last fall. Found 2 shattered pistons, cam in 4 pieces, wiped bearings, bent valves, 2 damaged cylinders, a few shattered lifters, and some bent push rods. I found another engine that came from a 77 Glasstron. Had some rust and worn cylinders. I cleaned up and used the block and heads. Everything else came from the original motor. I have replaced or cleaned all fuel filters and screens, rebuilt the carb, replaced the fuel pump, adjusted the shifting linkage, new lower gear case seal kit, aligned the motor, new impeller, new exhaust flappers, and a new solenoid. I installed the seal kit on the lower unit due to some water intrusion. Haven't had a problem with it since. It did run well after the initial rebuild, but after some initial problems starting with over heating I am stuck here. Any help will be greatly appreciated.

About to call it a night. Planning to explore in the morn. a couple of other things: I switched the post and rocker on the accelerator pump from another carb. The one on the original was worn and couldn't be adjusted to spec. All the parts in the Holley carb kit matched.

Pulled the carb today. I pulled the metering block and fuel bowl. The power valve had 2 gaskets on it when I rebuilt it. I kept it the same at the time. Decided to go back with only one this time. I also pulled and inspected the main jets, accelerator pump, and idle needles. All seem to be good. I also blew out all the passages in the metering block one more time. I also added the spring under the float that was not there previously from another similar carb from the Glastron motor. Started it up on the muffs got it running in neutral like it was before. Now it's tring to run a little hot again, but have been able to keep it under 180 with not letting it idle too long. Makes me miss the days of the good cold well water. I did check the flow and impeller. The flow is a little low at idle, but the impeller still looks new. Also did a few other checks and the copper tube in the outdrive doesn't appear to be leaking (just one of the many other problems I've had). I'm going to try putting it in gear on the muffs to see if it tries to dies here in a little while. The starter is not always engaging the flywheel so now I have to fix that. Hoping it's just a minor part and not another big item to replace. Might even get lucky and have one laying around. If anyone has anything to add feel free. I'm sure I've overlooked something yet again.

When I bought my boat a few years back, the starter wouldn't always engage the flywheel. Left me stranded once, so I put a breaker bar in the boat to bump the crank to a less worn spot on the flywheel. I adjusted the starter (the bracket bolt holes had a little play in it) so it the starter teeth would engage as much of the flywheel teeth as possible, and haven't had a problem with it since.
