Stabilized Gas, Fog engine, changed oil, removed plugs from both exhaust manifolds and 2 plugs from engine block. Removed water pump hose and let everything drain to nothing. Then Poured Antifreeze in two hoses leading manifolds and waited to see pink come out of drain holes on Manifolds. Plugged those holes and preceded to pour more in those hoses till I saw pink come out of the engine block drains. Plugged those holes and put a little more but did not top it off. Filled up the water pump hose with antifreeze as well. Will be removing out-drive to do service. Is there anything else I need to do?

Did you run the engine after dumping the fuel system stabilizer in the tank. If you didn't you missed 1/2 that process. Stabilizing the fuel in the tank is fine but not running the engine means you have a fuel system full of unprotected fuel which is where you want the protection. Clogged carb/injection passages will not pass fuel.

Yes indeed I did do that. Ran it with Stabilizer for 10 minutes then fogged the motor. Then I changed the oil when oil was still warm to get as much as possible. Refilled to oil and put a new filter on. Then proceed with draining system and then adding antifreeze. Is there anything else you can think of? Just want to make sure. Feel good about draining system.
