I have a 19' StingRay BowRider with 3.0LX and Alpha One/ GenTwo leg. What does this draft?

And are sterndrives typically sitting lower in the water than, say, an outboard? Is the difference a lot? Thanks...

Ayuh,.... Got a Ruler,..?? Go measure it.... Every hull is different....

The lower unit of an I/O is 'bout the same size as an outboard, but the outboard could be mounted higher, or lower than normal...

In other words, those are unanswerable questions, with the Info presented...

Actually the distance from the cavitition plate to the bottom of the skeg is close to the same. Being the cavitation plate is level with the bottom of the hull, the depth should be the same.

Not necessarily. The OP's Stingray, being a little on the "sporty" side, probably has the drive mounted higher than that. Draft is less than 3' on that boat....2 1/2 maybe.

Single engine, deep V boats tend to have a little deeper draft. As for OB vs I/O, the extra weight of the I/O can make a few inches difference.
