I've noticed that pulling the fuel line off and letting the motor run the carb dry after each use really helps on starts - usually starts 1 or 2 pulls every time.

I'm wondering though, as it didn't do this when I wouldn't drain the carb - why does it do this? I'm questioning if the carb floods rather than builds varnish as I never have to clean the carb - but when i leave the hose connected it seems to make for tough starting. Any ideas?

It's possible. Leaving the hose connected can cause problems, due to the solar/thermal pumping of the primer bulb, as well as the swelling (pressurization) of the fuel tank. That can lead to a ruptured fuel pump diaphragm,which pollutes the crankcase oil, and it can also overpower the float valve in the carb, which floods the carb.

That's in addition to the fact that fuel is remaining in the carb bowl, and will evaporate off eventually (typically a week or 2), resulting in varnishing.
