If water was mixing with the gear oil, should I be able to see it at the reservoir mounted to the side of the engine? Would it look frothy, as you'd expect when water and oil mix?

No under a slow leak. If there was a large leak then the water may show up, but by that time the drive would be toast

As AD has said above. Even less likely if the tank has the usual issue when it’s blocked by crud in the bottom and of no use anyway. Often the case unless it’s drained and cleaned out too. Always amazed at the number of boats that never have the full system drained down. Just the drive.

Is it worth having at all? This is the first boat I've owned and/or seen with it. If it is of no real use, then maybe having hoses and reservoirs that could leak are worth removing?

simply do the annual maintenance which includes checking the gear oil by pulling the plug and pulling the drive to inspect the gimble and u-joints.

Yes, in all cases if there is a leak then the reservoir amount will lower. Check when cool
The bottle has a one way valve in it which allows air in but not out. So when drive heats up it keeps the drive totally full and under pressure due to the heat build up. The pressure will help keep water out
