Engines turns off when warm and at low idle

So my issue is when im out after a couple hours of boating and i want to come back to dock and of course theres always a line, i bring my throttle down while still in forward gear and the engine will feel like it starts to choke and stall so i start doing donuts just so it wont turn off on me, then when i finally get dizzy and i just want to put it in neutral it turns off altogether as soon as i put it in neutral. When i try to turn it back on it gives me a hard time and what i try to do is as soon as i hear the engine turn over i put it in forward gear (which makes a clunk sound???) and the engine will run but again if i bring the throttle down it will turn off.

Questions:
1. Why does it turn off when i bring the throttle down in forward gear?
2. Why does it turn off when im in neutral and i switch to forward?
3. Whats the clunk sound?

You have your idle speed possibly set too low? What is the engine speed (RPMs) when you put your motor in neutral?

2. Why does it turn off when im in neutral and i switch to forward?

Again, if your idle is set too low in neutral, putting it in gear puts a further load on the engine, and that will stall it.

3. Whats the clunk sound?
The CLUNK is the forward gear (or reverse gear, if you are putting it in reverse) engaging. a single CLUNK is good. A grinding noise, not good. a CLUNK while in gear, also not good.

whats a good starting point for the idle knobs on this engine so that i can fix this issue and the clunk is just one single clunk when i change gears nothing else but i figure something needed to be lubed that hasnt been...

That is your idle mixture. I don't know the procedure for setting the mix screw, but this is in the top-secret file

Just make sure your lower unit has the proper level of lubricant.
