When I'm figuring out how much vinyl I need how much do I account for, for a 3 in cushion? Obvious answer is 3in I get that but I wasn't sure how much "scrunching" I get out of repurposed couch cushions also how much should I tuck over the (back)side to staple.

At least 1 1/2 - 2" over all the way around to get good grip for pulling tight and stapling.
You don't want scrunching.
If your old cushions are compressed from sitting on them.
You can steam them to bring them back to full height.
If they have odor you can use H2O2/water mix in the steamer to remove it.

If you're sewing you also need to allow 1/2" for your seams. This drawing might help...

I like to use 1/2" strips of ShoeBox cardboard and roll the vinyl onto the cardboard prior to stapling it. Give it a much better chance of not tearing and give a much straighter and more uniform stretch. You will have a bit of a stretch to the final fit but don't over do it. I used Donor Couch foam. Cut the foam 1/2" larger than the Plywood bases so it will "Fill Out" your covers. Also cover the foam with Plastic to protect it from the abrasion from the vinyl.

everything you have gotten is great. good advice on all. just listen to one more person. give your self a couple inches to hold and staple. you will waste more if you have to redo because its short
