First time throttling up and got oil.

This is on a 1975, 1150 straight 6. The last owners replaced the throttle after breaking it (they say when they hit a sand bar). It did not work right for them and they thankfully lost interest . I am glad they did not do a lot with the boat. Their rewiring job took sometime to fix. Anyway we got the throttle back together correctly and started it up for the first try. It sounded a bit clunky, so do some of the videos I've seen. After just a very short running, we shut it off and noticed the tan globs of goo. We changed the lower end oil few days ago. It was black with a small amount of stuff, most of which was collected nicely on the magnetic screw. No water.
I did not catch where this goo had come from as we need a larger bin, water was flying everywhere.

that my friend is the oil that comes out of your exhaust. 100% normal. Also, that bucket is not high enough to supply water, the water intake holes are exposed so you'll probably getting air in your system, get some muffs....5 bucks at wally work and then you don't have to fill or bother with that bucks (and you'll probably use less water) Also, if you haven't done so replace the impeller and do a link and sink as described on here. You have a great engine there.

Thank you. We have been testing it with the muffs on. I was under the impression that if we were doing anything beyond neutral running it should be in water rather then muffs. Yea it was not as deep after a moment of throttle. That's a big motor, I am excited to see how it does in the water.
